Pineapple dream squares

All that it takes to make this even more delicious is to melt two semi-sweet chocolate squares with 5ml (1tsp) vegetable oil and drizzle over cooled pineapple squares.

-375 ml (1 1/2 cups) all purpose flour
-60 ml (1/4 cup) brown sugar, lightly packed
-125 ml (1/2 cup) butter or margarine, softened
-250 ml (1 cup) flaked coconut
-175 ml (3/4 cup) brown sugar, lightly packed
-175 ml (3/4 cup) corn syrup
-1 can 398 ml (14 oz) crushed pineapple, well drained
-30 ml (2 tbsp) butter or margarine, melted
-5 ml (1 tsp) vanilla extract
Directions: To make base: Preheat oven to 180 C (350 F). Spray a 23 cm (9-inch) square pan with cooking spray. In a medium bowl, combine flour and brown sugar. Cut in butter until mixture is crumbly. Press into bottom of pan. Bake until lightly browned, 12 to 15 minutes. Cool slightly.
To make topping: In a medium bowl, whisk eggs just until blended. Stir in remaining ingredients. Spread over base. Bake until topping is set but still soft in centre, 40 to 45 minutes. Cool completely on a wire rack. Cut into squares. Keep refrigerated.
